Daniel Sequeira was working in the Middle-east and Europe when he came back to Goa with an idea of opening a shawarma stall. There were a few odd shawarma outlets across the state but they kept closing down. That’s when Daniel started selling shawarmas off a rickshaw at Baga in 2000. By 2001, they had moved to Mapusa market, which is where they have been for the last 15 odd years.
Daniel came up with his own version of shawarma, one that is so popular that people from the other end of the state know of the small van that opens shop at 5:30 PM. He took the basic Goan bread – pav – and changed its shape to make it elongated. This is slit open and layered with a special, home-prepared mayo (a ‘twisted recipe’ we’re told, which is more tangy). This pav is then stuffed with freshly cut cabbage, roasted tomatoes and warm, roasted marinated chicken (the marinade includes a special shawarma masala developed by Daniel and his wife). This is topped with another round of mayo and served to customers, some of whom pack 20 shawarmas to carry home.
The outlet is now run mostly by Lezwan, Daniel’s son, a friendly ex-merchant navy gentleman, whose joy comes from seeing people enjoy their signature shawarma, perfected for Goans.
